Chefs Jennifer and Bryan Illingworth studied at Western Culinary Institute. They have spent the last 12 years catering and developing their BBQ concept. While their background is French cuisine, their passion is West Coast BBQ. Bryan says “we weren’t interested in doing just one genre of BBQ. You’re gonna get your Texas which is all pepper and salt and that’s it. Or you go to Kansas City and it’s all tomato based. If you go to Carolina it’s all vinegar. In California you’re going to get your tri-tip. We pulled all those flavors together and said, ‘This is what West Coast BBQ is’.” Their food truck, which was launched in 2012, is located in the pod next to Spoken Moto in the Mill Quarter neighborhood above the Old Mill District and just down the road from Crux Brewing. They are mobile, however, and will gladly take their food show on the road and “grill it up curbside” for catering clients. Their meats are smoked in a wood fire pit, but they also use open flame grill to impart more flavor, and their sauce recipe has been handed down generations, then modernized for the taste buds of today.
