Located in the food cart pod at Spoken Moto on Industrial Way in Bend, just down from Crux Brewery in the Mill quarter, Himalayan Bites churns out fresh, interesting, warming food Tuesday – Saturday 10:30 a.m. – 9:00 p.m. and Mondays 3:00 p.m. – 8:30 p.m. Chef Tenzin Sherpa’s food encompasses the cuisine of Tibet, Nepal, and Bhutan. His love of food began at boarding school, where he was served such bland food, he would sneak into the kitchen gather spices, mix them and then quietly share them with the other boys to season their food. Himalayan Bits is best known the original Sherpa family recipes for hand-made dumplings (sha-momo) that are stuffed with meats and veggies and then steamed until they have turned into “little clouds of savory goodness”, and drizzled with tomato sauce. Expect dishes that feature ingredients like coconut milk, noodles, fresh vegetables, and rice, and depend on lots of flavor in anything you choose to order. The food cart pod has seating, a nice view of the mountains and a convivial atmosphere at the group tables.
