The Sol Verde food truck opens seasonally each spring at the corner of Galveston and Federal on Bend’s west side, with all food prepared from scratch using fresh ingredients and each dish made as ordered. Proud to use local ingredients whenever possible, their ground beef is from Anchor Heart Farms and their breakfast sausage is produced by High Hope Acres. They only serve authentic New Mexico chile that is grown and processed by a cooperative of farmers in the infamous Hatch and Mesilla Valley regions of New Mexico. Their menu includes Breakfast Burritos, New Mexico-style Enchiladas, both Chile Verde and Carne Adovada Bowls, Gorditas, a Gordita Plate, Tacos, a Taco Plate, Burritos (including smothered style) with a vegetarian option, a Burrito Plate, and a New Mexico Salad. Mexican sodas, as well as local Kombuchas, are available, as well as 16-ounce jars of flame-roasted New Mexico chile in medium and hot preferences.
